The Mughals ruled much of India for over three hundred years, and part of their permanent legacy is their remarkable cuisine. They liked their food to be rich and richly flavoured, often cooking dishes to impress with their stock of rare and aromatic spices, blending milk and nuts into sauces and sweet delicacies to impart luxurious flavours and scents. In this class Anita will be showing you how to make Mughlai classics such as a real Korma, or a lush biriyani, and crisp-coated Rajma Galouti, vegetable patties enriched with cashew nuts and paneer.
